Preparation
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Place the bread cubes in a large bowl. If using nuts, toss them with the bread.
Making the Custard
- In a separate bowl, whisk together the eggs, milk, heavy cream, sugar, melted butter, vanilla, cinnamon, and nutmeg.
- Stir in the mashed bananas until well combined.
- Pour the mixture over the bread cubes and press down gently. Let it soak for 15-20 minutes.
Baking and Serving
- Transfer to the prepared baking dish. Bake for 40-45 minutes until set and golden brown.
- While baking, make the caramel sauce: melt butter in a saucepan, stir in brown sugar and cream. Simmer for 3-5 minutes until thickened. Stir in vanilla and salt.
- Serve the warm bread pudding with a generous drizzle of caramel sauce. Enjoy!
