Method
Prepare the Eggs and Spinach
- Heat olive oil in a non-stick skillet. Sauté spinach until wilted (about 2 minutes).
- Remove spinach and set aside.
- Cook eggs (fried, poached, or scrambled) in the same skillet to desired doneness.
Prepare the Toast and Avocado
- Toast the bread slices.
- In a small bowl, mash the avocado with lemon juice, salt, and pepper.
Assemble the Toast
- Spread the mashed avocado evenly over the two slices of toast.
- Layer the wilted spinach on top of the avocado.
- Arrange the halved cherry tomatoes over the spinach.
- Place the cooked egg on top of the tomatoes.
Finish and Serve
- Season the egg with a final pinch of salt, pepper, and red pepper flakes (if using).
- Serve immediately.
