Avocado Toast with Eggs Spinach and Tomatoes

Ingredients
  

For the Toast and Avocado
  • 2 slices whole-grain bread
  • 1 ripe avocado
  • 1/2 teaspoon lemon juice
  • Salt and black pepper to taste
For the Toppings
  • 1 cup fresh baby spinach
  • 1/2 cup cherry tomatoes halved
  • 2 large eggs
  • 1 tablespoon olive oil for cooking eggs and spinach
  • Pinch of red pepper flakes optional

Method
 

Prepare the Eggs and Spinach
  1. Heat olive oil in a non-stick skillet. Sauté spinach until wilted (about 2 minutes).
  2. Remove spinach and set aside.
  3. Cook eggs (fried, poached, or scrambled) in the same skillet to desired doneness.
Prepare the Toast and Avocado
  1. Toast the bread slices.
  2. In a small bowl, mash the avocado with lemon juice, salt, and pepper.
Assemble the Toast
  1. Spread the mashed avocado evenly over the two slices of toast.
  2. Layer the wilted spinach on top of the avocado.
  3. Arrange the halved cherry tomatoes over the spinach.
  4. Place the cooked egg on top of the tomatoes.
Finish and Serve
  1. Season the egg with a final pinch of salt, pepper, and red pepper flakes (if using).
  2. Serve immediately.
