Ingredients
  

Cupcake Batter
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon distilled white vinegar
  • 1 tablespoon red food coloring
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Batters
  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Whisk flour, sugar, baking soda, and salt in a large bowl.
  3. In another bowl, whisk oil, buttermilk, egg, vanilla, and vinegar.
  4. Combine wet and dry ingredients until smooth.
  5. Divide the batter into two bowls. In one bowl, stir in the cocoa powder and red food coloring.
Marbling
  1. Drop a spoonful of white batter and a spoonful of red batter into each cupcake liner.
  2. Use a toothpick to gently swirl the two colors together.
Baking
  1. Bake for 18-20 minutes until a toothpick comes out clean.
  2. Cool completely on a wire rack.
Frosting
  1. Beat cream cheese and butter until fluffy.
  2. Gradually add powdered sugar and vanilla, beating until smooth.
  3. Pipe onto cooled cupcakes.
