Method
Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package directions until al dente.
- Drain and set aside.
Sauté the Chicken
- Toss the chicken pieces with 1 tablespoon of Cajun seasoning.
- In a large skillet, heat olive oil and butter over medium-high heat.
- Add chicken and cook until browned and cooked through (about 5-7 minutes).
- Remove chicken from the skillet and set aside.
Make the Sauce
- In the same skillet, add the sliced bell peppers and sauté for 2-3 minutes.
- Reduce heat to medium and pour in the heavy cream.
- Add the remaining Cajun seasoning, garlic powder, basil, pepper, and salt.
- Bring to a gentle simmer for 3-5 minutes until the sauce begins to thicken.
Assembly
- Stir in the Parmesan cheese until melted and smooth.
- Add the cooked pasta and chicken back into the skillet.
- Toss everything together until well coated in the sauce.
- Garnish with green onions and parsley before serving.
